Panettone

Italian Christmas Bread - Panettone Recipe

2 teaspoons yeast
2 cups bread flour
1 3/4 cups whole wheat flour
2 eggs
1 1/2 teaspoons vanilla - nut extract flavoring
2 tablespoons brown sugar
1/4 cup candied mixed fruit
1/4 cup candied cherries
1/4 cup chopped nuts
3/4 teaspoon salt
1/4 cup butter
3/4 cup warm milk
1/4 cup powdered milk

A much better use for the candied fruit usually used for fruitcakes. Follow the directions on your bread machine about adding ingredients, I toss them all in with the liquid last. Cook on regular bread cycle. Slice and sprinkle with powdered sugar before serving. For the nuts I used walnuts but pecans or sliced almonds would also be good. This recipe has been reduced slightly and modified from Panettone II at allrecipes.com as the bread rose slightly too much for my medium size bread machine.

If you add cardamom this is the same as Norwegian Julekake.
