Coconut Rice


1 1/2 tblsp. virgin olive oil
1 cup brown rice
1 (14 ounce) can lite coconut milk
14 ounce can vegetable stock
1/2 teaspoon cumin seeds
1/2 teaspoon fennel seeds
1 pinch crushed red pepper flakes
1 pinch salt
1/2 teaspoon ground turmeric
1/2 teaspoon dried cilantro
1 bay leaf, cut in half
1 1/2 oz. (1 pkg) raisins
1/3 cup sliced almonds

Place in rice steamer 55 minutes.
